And, Indian cuisine has become one of the most fascinating of the lot despite its tangy and hot foreign flavour to many. Bengal’s love of baking and confectionaries lining the streets all across the city, and using refined flour in Luchis (Bengali Pooris), is nothing but the influence of European cooking methods. Then, if we look at the rich distinct red tinted Kashmiri cuisine, the method of boiling the spices instead of frying is influenced from Central Asia, and can hardly be called very Indian. The widely favourite dish, biryani also originated in Persia and was brought to the country by Mughals. So, we can see that in our country our cuisine echoes many far away cultures, and we don’t just owe our unique taste in food to our ancestors.
